Enlarge +1 str exceeding racial default (i.e. enlarged human gets 24 str). And -1 dex (i.e human max is now 19 dex)
Shrink +1 dex/ -1 str

The logic behind this is physics. Large means strong and slow, but current implementation does not reflect this.

My understanding is that some skills already have a size-based modifier for damage. Is it correct to assume that the success of dodge and parry also has a size component to it?

In that case, probably the damage increase is already tuned for balance. Changing the mechanism to make an increase in strength beyond the racial maximum could mean either an unbalanced effect, or needing to tune down the other modifierb already put in place.

In the end, I'm not sure it matters so much which mechanism is in place, so long as it's balanced with other skills, spells, etc...
